The cream built up into a soft, swirly layer and before I even put it to my lips, I knew Bello and I would get along well during our time together.

I’m a fan of bottomless portafilters, and machines like the Bello are why. As soon as you move the heavy, mechanical-feeling lever to start pulling the shot, the machine begins producing a rich, airy, amber-and-earthy shot that pools beneath a layer of cream. With a shot glass, you can really see how it adds up; He looks like someone pouring a Guinness. I actually got lucky with those first shots, because if your routine deviates even a little, the Bello will miss. If your grind is too fine, it will hum and have a hard time expelling a splash of overly bitter coffee into your cup. If your grind is too coarse, water will shoot through the portafilter as if it hadn’t touched the coffee at all, filling your cup with a weak coffee-adjacent water product that’s undrinkable and tastes like someone poured it in. the drip tray into your cup.

To be fair, this is not an entirely uncommon result when using a high-end espresso machine. They can be picky. The Bello even has an analog pressure gauge, which is very useful for diagnosing problems with your brews: low pressure and a fast pour mean your coffee is too thick; High pressure but slow pour means the coffee is too fine or too tight.
